Yeah, he didn't stick with Food Network because network execs wanted to change his on-camera image to something that he wasn't. Bourdain is/has always been known for going to the little, local joints, passionately advocating for people to be more willing to try "the wierd stuff" that local residents have enjoyed for generations. The Food Network execs wanted him to be more like "cheery" and less "grumpy" or "in your face" in the foods that he features and talks about. He didn't want to change what he did, so he left and found a new home on Travel Channel, where he's able to show the type of food that HE would like to try when he travels, and thus the type of food that he thinks people who travel are missing out on by sticking to only the international/widely-known chain restaurants or by sticking to eating in the hotel.
Sign me up for Team Bourdain.

EDIT: Now don't get me wrong, Paula Deen makes some good-looking food, but really, considering how much butter and heavy cream she uses, her cholesterol must be through the roof. Give me a choice of eating something she makes, or eating a hot bowl of Pho from some corner street joint that Bourdain found in Bangkok, and I'll take the Pho any day of the week.
