I recently saw something on National Geographic about crop circles, it was pretty interesting...  Only saw a few minutes, but they were filming a few guys who would go out during the middle of the night, complete a crop circle before the sun came up, and get out of there...  The really big ones, however, must have taken either a lot of time or people. :P
